As you guys know, my two favorite hobbies are doing things around/for the house and cooking but unfortunately, the pendulum is rarely evenly between the two. I swing back and forth between spells of realllly focusing on the house and not wanting to cook, then reallly wanting to cook and spending my weekends with a pile of recipes. I am back into a cooking spell and had come up with a great Valentine’s menu last weekend but…since those plans got squashed by the husband’s food poisoning bout, I’m attempting them this weekend. One of the recipes I was super eager to try were these Strawberry Chocolate Chip Cookies by Sally’s Baking Addiction, you know, for the husband, not me at all…nope ;)
This recipe is unique in that it is made from a strawberry boxed cake mix, which makes it a piece of cake (ha!) to whip up (ha! again!). The wet ingredients (oil, egg, vanilla), get all whipped together and added to the dry.
Surprise! There’s the beautiful pink color!! I’m a huge pink snob and usually don’t like any pink things but, for some reason, I adore the shade of pink these turned! :) Can I get this in some toenail polish, please? The recipe calls for 1 1/4 cup chocolate chips but that’s pretty much one of the small bags, so I just dumped the whole thing in.
Now, the batter is suuuuuper sticky so it’s pretty annoying to mess with but just dollop the best you can and, oh darn, you’ll have to clean the rest of your spoon and fingers yourself. A tip on this recipe which I didn’t know of was to sprinkle some loose chocolate chips on top of your dollops before you bake them to give that picture-perfect-chocolate-cookie look. So fancy!
Ok, yes, mine were a bit flat, but such is the case down here every.single.time. I don’t know how many flat cookies it’ll take me to learn to up the baking powder a little to compensate for our annoying humidity. But hey, they’ll eat, right?!?
Gah these were amazing!!! So fluffy inside and the strawberry is a not too sweet and actually more tart flavor which is nice. The husband took the whole bag with him to work yesterday though which really cramped my plans for eating these with some nice cold milk. They were for both of us dude.
Honestly, chocolate chip is by far my favorite kind of cookie so any variation on them is so much fun to make. And these were up there! Taste-wise and their pink prettiness (that may be the one and only time you see the phrase “pink prettiness” on my blog, FYI).
