Baked Ham and Egg Cups

Baked ham and egg cups are a simple and healthy way to get breakfast on the table in just 20 minutes on those busy mornings!

It can be especially hard to get back into the swing of things when school starts up and you’re struggling with waking up to an alarm clock again.  Or, more importantly, waking the kids up to an alarm clock.  Sometimes you really need a quick and easy breakfast you can throw together without having to resort to a pre-packaged pastry or sugary cereal.

These baked ham and egg cups come together in just 20 minutes and are a great source of filling protein to get the kids ready for a day of learning and keep them nice and satisfied until lunch.  Make these ahead of time on the weekends or pop them in the oven while the coffee is brewing for a quick and delicious breakfast.

These would also be a perfect addition to your next Sunday brunch!  Customize the eggs however you want with your favorite omelette fixings.  I used potatoes and cheese in these but some other options for you to try could be salsa, bacon, green peppers, mushrooms, spinach, or even asparagus.  The sky is the limit with these!

These were kid tested and mom approved!  Just a few tips for ya. Err on the side of thicker rather than thinner when it comes to your ham slices and be careful not to let it break while you’re pushing it into the muffin tin.  Otherwise your egg will seep through and stick to the bottom of the tin.  Not fun.

Baked Ham and Egg Cups

Yield: 12
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

These cute little cups are as quick and easy to make as they are pretty, perfect for busy mornings! 

Ingredients

  • 12 ham slices
  • 8 large eggs
  • 3 Tbs milk
  • Salt & pepper to taste
  • 1/2 cup shredded cheese
  • Other omelette add-ins, optional

Instructions

  1. Preheat oven to 350 degrees and gently push a ham slice into each muffin tin.
  2. Crack eggs into a medium bowl, add milk, salt, and pepper and beat well.
  3. Add your favorite omelette ingredients to the bottom of each ham cup and pour in eggs until 3/4 full.
  4. Bake at 350 degrees for 15 minutes or until eggs are just set.

Notes

If you're planning on making these ahead of time then decrease the bake time because they'll cook a little more when they're reheated.
