Dude Breakfast Casserole

We are fresh off a super relaxing weekend in Houston so I wanted to share this quick and simple breakfast casserole recipe for y’all this Monday morning.  One of my coworkers made it a few Fridays ago and the whole office made quick work of it for breakfast as well as lunch that day, me included.  He is very much a man’s man  bachelor who happens to know his way around the kitchen, and will make some lady very lucky some day. He said his family has been making this casserole for years.  It requires only a few, ready-to-go ingredients and can be prepped the night before, a total dude recipe.  And I have made it twice in just a few weeks, that’s how good it is.

All that is needed is some frozen hashbrown patties, bacon, cheese, milk, eggs, and some cajun seasoning (Tony’s).  Of course it can be fancied up by making your own hashbrowns and different cheeses but if you’re so inclined but it’s not needed at all.

The frozen hashbrown patties line the bottom of the pan and get a good sprinkling of Tony’s (or other seasonings) over them.

Top these with crumbled bacon and the shredded cheese.  His recipe calls for pre-cooked bacon but I made some fresh cause #nothanks.  And I usually like to shred my own cheese but needed to use some pre-shredded bag cheese up so I didn’t this time.

The eggs get whipped up with the milk and further seasonings then poured over everything.

That’s it!  Then pop it in the oven at 350F for 45 minutes to an hour till it gets nice and brown and bubbly.

 

I topped mine with some of my aunt’s amazing homemade tomatillo salsa but any good picante or salsa is great on top.

I love that even though it’s a super easy and simple recipe, it has tons of flavor.  It would amazing with green chilis, tomatoes, even spinach, in it too so it is crazy versatile.

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Only a few ingredients and can be prepped the night before, this total "dude"'s recipe is perfect for busy weekday mornings.

Ingredients

  • ~4 frozen hashbrown patties
  • 1 cup shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 6 eggs
  • 1 1/2 cup milk
  • ~1 tsp cajun seasoning
  • salt and pepper

Instructions

  1. Preheat oven to 350F and grease a 9x13 baking dish
  2. Lay the hashbrown patties along the bottom of the pan, sprinkling with the cajun seasoning, salt and pepper
  3. Add bacon crumbles
  4. Add cheese
  5. Whip eggs with milk and more cajun seasoning, then pour over everything
  6. Bake for 45-60 mins until it browns on top
  7. Serve with salsa of your choice.

 

That’s it!  I plan to add green chilis and maybe some fresh tomatoes next time and would love to see your variations on it if you make it too.
